If you’ve tried Undercover Chocolate’s dark chocolate quinoa crisps from Costco or Target, you will know how good is that dark chocolate with a crispy, nutty crunch from the quinoa.

I make mine at home now, and the taste is close to the Undercover version, texture is exactly what you’d expect from a healthier Crunch bar, that same satisfying chocolate crunch, but with actual nutrition behind it.

I eat these at 11am and 4pm pretty much every day when I need something that feels indulgent but isn’t going to wreck the rest of the day.

I make mine by cooking raw quinoa and then baking it dry, which takes more time but gives me full control over the crunch level.

What Do They Taste Like?

The best comparison is a Crunch bar, but made with real dark chocolate and without the waxy coating or excessive sweetness.

The quinoa pops and crunches in exactly the same way as the rice in a Crunch bar, but with a nuttier, more complex flavor.

On the chocolate: Use a bar over chips when possible, chips contain stabilizers that make the chocolate a little waxier when it sets. A chopped dark chocolate bar gives you a cleaner snap and better flavor.

On the sweetener: The Undercover version doesn’t add extra sweetener, the dark chocolate provides all the sweetness needed. If you want it closer to the original, skip the honey. If you like sweeter, add a tablespoon.

Substitutions

  • Chocolate: Milk chocolate for a sweeter, creamier version. White chocolate for a completely different look and flavor. Vegan dark chocolate (Enjoy Life) for a fully plant-based version.

How to Make Dark Chocolate Quinoa Crisps

This is my method. Takes about 45 to 50 minutes total but gives you full control over the texture.

Step 1: Cook the Quinoa

  • Rinse 1 cup of raw quinoa under cold water to remove the natural bitterness from the outer coating.
  • Combine with 2 cups of water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed and the quinoa is tender.

Step 2: Bake It Dry

  • Preheat your oven to 300°F (150°C). Spread the cooked quinoa in a thin, even layer on a parchment-lined baking sheet.
  • Bake for 20 to 25 minutes, stirring halfway through, until the quinoa is completely dry and starting to get slightly crispy.
  • It should feel light and brittle when you press it, not damp or soft.
  • Let it cool completely on the baking sheet before touching the chocolate.
  • Any residual warmth will cause the chocolate to seize.
  • For even more crunch, after the quinoa has cooled, toast it briefly in a dry skillet for 2 to 3 minutes over medium heat.

Step 3: Melt the Chocolate

  • Melt your dark chocolate using a double boiler or microwave.
  • For the microwave, heat in 30-second intervals and stir after each one.
  • Stop when mostly melted and stir until smooth.
  • Add honey and vanilla if you are using that and stir to combine.

Step 4: Combine and Form Clusters

  • Add the cooled dried quinoa to the melted chocolate and stir until fully coated.
  • Drop spoonfuls onto a fresh parchment-lined baking sheet.

Step 5: Set and Store

Method 2: Quick Version (Store-Bought Puffed Quinoa, 5 Minutes)

If you want these done in under 10 minutes, use store-bought puffed quinoa.

You can find it at most health food stores, Whole Foods, or online. No cooking, no baking.

Optionally toast the puffed quinoa in a dry skillet over medium heat for 2 to 3 minutes until you smell a light nuttiness.

This step is quick and makes a real difference in the final crunch. Let it cool for a few minutes.

Melt the chocolate, mix in the puffed quinoa, form clusters, sprinkle sea salt, and refrigerate for 30 minutes. That’s it.

The flavor difference between Method 1 and Method 2 is subtle.

  • Method 1 gives a little denser, nuttier bite.
  • Method 2 is lighter and airier.

Tips

Work fast after combining: Dark chocolate sets quickly, especially on a cool surface. Have the baking sheet ready, your salt nearby, and drop clusters as soon as everything is mixed.

For a glossier finish: Temper the chocolate by melting two-thirds first, then stirring in the remaining one-third off the heat. This gives you a shinier, snappier finish similar to the Undercover bar coating.

 

Variations

Sea Salt and Dark Chocolate: The closest to the Undercover version, just chocolate, quinoa, and a generous pinch of flaky salt, no sweetener needed.

Peanut Butter Chocolate: Stir 2 tablespoons of natural peanut butter into the melted chocolate before adding the quinoa. Gives you a Reese’s Pieces meets Crunch bar kind of flavor.

Espresso Dark Chocolate: Add half a teaspoon of espresso powder to the melted chocolate. It will deepens the dark chocolate flavor and makes these taste more complex.

White Chocolate with Pistachios: Use white chocolate instead of dark and press crushed pistachios into each cluster before chilling. Completely different flavor profile but genuinely delicious.
