Dark Chocolate Coating:
- 12 oz high-quality dark chocolate 70% cocoa or more
Peanut Butter Filling:
- ½ cup natural peanut butter unsweetened, creamy
- 2 tbsp powdered sugar
- ¼ tsp sea salt + extra for topping
- 1 tsp vanilla extract optional, for added flavor
Step 1: Melt the Chocolate
Chop dark chocolate into small pieces for even melting.
Use a double boiler method: Place a heatproof bowl over a pot of simmering water, ensuring it doesn’t touch the water. Stir until melted.
Alternatively, microwave in short intervals, stirring between each until fully melted.
Step 2: Prepare the Peanut Butter Filling
In a bowl, mix peanut butter, powdered sugar, sea salt, and vanilla extract.
Stir until smooth and creamy.
Step 3: Assemble the Peanut Butter Cups
Line a mini muffin tin with paper liners or use silicone molds.
Pour a small amount of melted chocolate into each mold, just enough to coat the bottom.
Drop a teaspoon of peanut butter mixture into the center.
Cover with another spoonful of melted chocolate to enclose the filling.
Step 5: Unmold and Serve
Once set, remove the peanut butter cups from the liners or molds.
Enjoy as is, or drizzle melted chocolate or caramel for an extra touch.
