What Type of Sweet Potato to Use
It is very important to choose the right sweet potatoes to make this 2 ingredient sweet potato chocolate mousse recipe.Â
Because all sweet potatoes aren’t the same.
I recommend going with orange flesh sweet potatoes, like Jewel and Granet sweet potatoes.
Because they are naturally sweet, creamy, and they become soft when you roast them.
You should avoid white flesh sweet potatoes, because they are too stretchy and dry.
And also don’t use purple sweet potatoes, because they are hard to blend. And even when you blend them, they will give you a different texture.
So my first choice is to go with the orange flesh sweet potatoes.
Also, you want to roast, not boil. Boiled sweet potatoes will get watery and dull in flavor.
On the other hand, roasting will bring out caramelized sweetness to balance the chocolate.
You want just 1 cup of mashed sweet potato. Or we can say one medium-sized roasted sweet potato.
What Chocolate to Use for the Best Mousse
Besides the sweet potato, the second ingredient is also very important, and you need to choose it right too.
You will need about ¾ to 1 cup of dark chocolate; you can chop it if you’re using a chocolate bar or use it in chip form (it should be around 150–175 grams).
Also, you wanna go with a good quality dark chocolate — minimum 60% cacao, but 70% or higher will give you more intense mousse.Â
When I made 2 Ingredient Sweet Potato Chocolate Mousse, I used Lindt 70%, but I also like Ghirardelli 72%, and even Guittard Extra Dark Baking Chips; they all worked well.Â

Step-by-Step: How to Make 2 Ingredient Sweet Potato Chocolate Mousse
Here is how I made two ingredients sweet potato chocolate mousse for myself. You have to follow this process like me, it’s too easy:
Step 1: Roast the Sweet Potato
Firstly, you wanna preheat your oven to 400°F (200°C).
Meanwhile, wash and scrub your sweet potato and poke it a few times with a fork.
Then wrap in foil and roast for 45 to 50 minutes until it becomes super soft and caramelized from the inside.
Once done, let it cool.Â
Then peel and mash your sweet potato to make it creamy; you can use a fork or a food processor for that. You want your sweet potato to be lump-free and smooth.
Pro Tip: You can do this step ahead. You can roast the sweet potato in bulk and store it in the fridge for mousse prep anytime.Â
Step 2: Melt the Chocolate
Take a heat-safe bowl and add chopped dark chocolate or chips, and melt them either:
- Using a microwave: You have to heat the dark chocolate in 20-second bursts, also stirring each time.
- Using a double boiler: You will place the bowl over simmering water and stir until melted.
Once the dark chocolate is silky and fully melted, you will remove it from the heat.
Optional here: In that melted chocolate, you can stir in toppings such as vanilla, sea salt, or any spice if you want extra flavor depth.
Step 3: Mix and Blend
Into that melted chocolate, you have to add your mashed sweet potato.
Then, mix everything with a spatula, then blend.
You can use:
- Hand blender
- Food processor
- High-speed blender
Blend until this chocolate and sweet potato mixture becomes super smooth, creamy, and thick like mousse.
Tip: If the mixture of sweet potato and dark chocolate looks too thick, you can add 1 tbsp of warm almond milk or coconut milk to loosen. But don’t make it runny — it needs to be thick so that you can set it nicely.

You have to add 1 to 2 tablespoons of peanut butter or almond butter to the chocolate before mixing. It will give a Reese’s vibe with a creamy nuttiness.
Spiced Mousse
You can add a pinch of cinnamon, nutmeg, or chipotle powder into the mix.Â

But honestly, sweet potato has a little better base in so many ways.
- It’s more stable, and avocado might turn brown or weird if not eaten fast.
- Sweet potato will give you natural sweetness, but avocado won’t.
