2 Ingredient Sweet Potato Chocolate Mousse

This creamy and healthy 2 ingredient sweet potato chocolate mousse is silky, dairy-free, and melts in your mouth like truffles. It is a No cream, no sugar, no fuss—just sweet potato and dark chocolate!

Ingredients
  

1 cup mashed roasted sweet potato

  • about 1 medium sweet potato
  • ¾ to 1 cup dark chocolate chips or chopped dark chocolate around 150–175g

Optional (to taste):

  • ½ tsp vanilla extract
  • Pinch sea salt
  • Dash cinnamon or espresso powder
  • 1–2 tsp maple syrup or honey if you want it sweeter

Instructions
 

Step 1 – Roast the Sweet Potato:

  • Preheat oven to 400°F (200°C).
  • Wash and poke 1 sweet potato with a fork,
  • Wrap in foil, and roast for 45–50 minutes until caramelized and soft.
  • Cool, peel, and mash until smooth to get 1 cup mashed roasted sweet potato. (You can do this in advance.)

Step 2 – Melt the Chocolate:

  • In a heat-safe bowl, melt ¾ to 1 cup dark chocolate either in the microwave (20-second bursts) or over a double boiler.
  • Stir until silky and smooth.
  • Optional: Stir in vanilla extract, sea salt, or other flavorings at this stage.

Step 3 – Mix & Blend:

  • Add the mashed sweet potato into melted chocolate.
  • Use a spatula to mix
  • Blend using a hand blender or food processor until thick and creamy like mousse.
  • Tip: If the mix is too thick, add 1 tbsp warm almond or coconut milk. Taste and adjust sweetness with maple syrup if needed.

Step 4 – Chill the Mousse:

  • Spoon mousse into jars, ramekins, or dessert cups.
  • Cover and refrigerate for at least 1–2 hours or overnight for best texture.

Notes

Roast your sweet potatoes in advance and keep them in the fridge — it’ll save time and give your mousse a deep caramel flavor. Also, don’t over blend or add too much liquid; the mousse needs to stay thick to set well!
