Ingredients
  

For Yeast Dough (Authentic Texture)

  • cups all-purpose flour
  • 1 tsp sugar
  • ¾ tsp salt
  • tsp instant yeast
  • ½ cup warm water
  • 1 tbsp Greek yogurt or sour cream optional for soft dough
  • 1 tbsp oil olive or neutral

For Quick No-Yeast Dough

  • 1 cup self-rising flour
  • ¾ cup plain Greek yogurt

For Filling

  • 6 oz cream cheese softened
  • Optional mix-ins:
  • Garlic powder
  • Chives
  • Jalapeño chopped
  • Sundried tomato bits
  • Everything bagel seasoning
  • Or sweet combos: cinnamon + honey + chopped strawberries

For Topping

  • 1 egg + 1 tsp water egg wash
  • Everything bagel seasoning OR
  • Sesame seeds poppy seeds, dried onion flakes, or sea salt

Instructions
 

Step 1: Make the Dough

  • In a bowl, mix flour, sugar, salt, and yeast.
  • Stir in warm water and oil. Add Greek yogurt (if using).
  • Knead 6–8 minutes until soft and elastic.
  • Cover and let rise 45–60 mins until doubled.
  • (No-yeast version? Just mix self-rising flour + yogurt, knead 2 mins. No rise needed.)

Step 2: Prep Cream Cheese Filling

  • Mix cream cheese with your chosen flavor (optional).
  • Scoop into 1 tsp balls and freeze for 15–20 mins.
  • Pro tip: Freezing prevents the cheese from leaking during baking.

Step 3: Divide Dough & Shape Minis

  • Punch dough down and divide into 10–12 parts.
  • Flatten each into a 2.5–3" circle.
  • Place frozen cheese ball in center and seal tightly.
  • Roll into a ball, seam-side down.

Step 4: Topping

  • Brush with egg wash.
  • Sprinkle everything bagel seasoning or other toppings.

Step 5: Bake

  • Preheat oven to 375°F (190°C).
  • Bake for 13–15 mins until golden and shiny.
  • Cool 2–3 mins before biting into that hot cheesy center.
