Ingredients
  

  • 1 ripe avocado
  • 1/2 cup pitted dates Medjool preferred
  • 1/4 cup unsweetened cocoa powder or raw cacao powder
  • 1/2 teaspoon vanilla extract

Pinch of salt

  • 1/4 cup plant-based milk like almond or oat, or dairy
  • Optional: 1 tablespoon nut butter like almond or cashew

Instructions
 

Step 1: Prep Your Dates and Avocado

  • If your dates are a bit firm, soak them in warm water for about 10 minutes.
  • Meanwhile, cut avocado in half, remove the seed, and scoop the flesh into a blender.

Step 2: Add Remaining Ingredients

  • In the blender, add cocoa powder, vanilla, a pinch of salt, and milk (start with 1/4 cup).
  • If using nut butter, add it too.

Step 3: Blend Until Silky Smooth

  • Blend everything on high until you get a thick, creamy pudding.
  • Scrape sides in between. Add more milk if needed, but not too much.

Step 4: Taste and Adjust

  • Taste the pudding. Add more cocoa for stronger flavor or another date/maple syrup for sweetness.

Step 5: Chill and Serve

  • Scoop into bowls or jars.
  • Refrigerate 30 mins to 1 hour if you like it chilled.
  • Or enjoy immediately.

Notes

Soak firm dates in warm water for 10 minutes before blending — it will make your pudding silky smooth. Also, chilling for 30 minutes will turn your pudding into a luxurious ganache-like dessert.
