This homemade Autocrat Coffee Syrup tastes just like Rhode Island’s classic. Sweet, smooth, and nostalgic, it’s the key to making coffee milk right at home.

Ingredients
  

  • 2 cups strong brewed coffee dark roast recommended
  • 2 cups granulated sugar
  • 1 tsp vanilla extract optional but recommended
  • Pinch of salt

Optional:

  • Replace half the white sugar with brown sugar
  • Add ½ tsp molasses for depth

Instructions
 

Brew Strong Coffee

  • Brew 2 cups of extra-strong coffee (double the grounds).

Dissolve Sugar

  • In a saucepan, combine hot coffee + sugar. Stir on medium until sugar dissolves.

Simmer & Thicken

  • Lower heat and simmer 15–20 minutes, stirring occasionally, until syrupy.

Add Flavor

  • Remove from heat, stir in vanilla and salt.

Cool & Store

  • Let cool fully, then pour into a jar or bottle.
  • Refrigerate for 3–4 weeks, or process in sterilized jars for 6-month shelf life.

Notes

For stronger Eclipse-style flavor, brew darker coffee and use less sugar.
For caramel flavor, swap half sugar with brown sugar.
